Try It Tuesday

How was everyone’s three-day weekend? Actually, I don’t think everyone got Monday off. The Moore School District actually had class yesterday! What a rip! I took the day off, but MAN! Sometimes I think it’s harder to take a day off because you have to take extra time to get caught up again. Sigh.

 

But at least today I’ve got a tasty Try It Tuesday to make your day a little sweeter.

 

Huff the Hubs can’t have chocolate. *Gasp* I know, he’s totally missing out, right? The delectable delicacy gives the poor guy migraines, so I’m always looking for desserts that have zero (or not a lot) of chocolate in them. Thanks to Pinterest, I found one this weekend!

Lemon Cookies Original Pin

Light and luscious lemon cookies!

 

This cookie recipe only has three ingredients:

1 box lemon cake mix

1/3 cup oil

2 eggs

 

This was so easy; I got it taken care of in less than a half hour! First, I preheated my oven to 375*. Then, I mixed the oil, cake mix, and eggs together.

After that, I just grabbed some dough and rolled it into balls. (Helpful tip: spray your hands with Pam first; it helps to keep the dough from sticking to your fingers). Then, I placed them on a greased cookie sheet.

I baked them for about 5 minutes. After they cooled, I tried one.

They were fabulous!

 

If you’ve got an extra sweet tooth and would like a little glaze, all you need is about ¼ cup powdered sugar and 2 tablespoon milk. Mix it all together and drizzle on the cookies! These would be GREAT with tea! Maybe serve at your next Downton Abbey watch party…?
