Happy Tuesday, peeps!

Every week, we have dinner over at my parent’s house. My mom was getting tired of the “same ole, same ole”, so she tried a new recipe! And guess what? Its today’s Try It Tuesday!

The dish was Spicy Cheesy Chicken Spaghetti. There’s a similar recipe on Pinterest! (My mom made the “healthier version” since we’re all trying to lose some pounds.)

Here’s what you need:

~1lb. 2% Velveeta

~1 pkg whole wheat spaghetti

~1 lb. boneless, skinless chicken cooked and cut up into pieces

~1 can Rotel

~1 can 98% Fat Free Cream of Chicken Soup

~1/3 cup milk

 

Preheat your oven to 350*. Cook the spaghetti as normal. Add your cooked chicken (Mom de-boned a rotisserie chicken from the grocery store. It worked great!) to a large bowl along with Velveeta, milk, soup, and Rotel. Microwave and stir until cheese is melted and all ingredients are thoroughly blended.

Next, throw the noodles into the bowl and mix well.

Then, pop it into a casserole dish and bake for 30-35 minutes and serve!

I liked this! I will say, though, that it was really rich. I think it would help if maybe some kidney beans or black beans were served on top or on the side. Or maybe even if it was topped with lettuce!
