Is It 2017 Yet?!

Y’all. I just can’t with 2016 anymore. I’m so incredibly over it. Don’t get me wrong, there have been some good times in 2016–Indy came into our lives, my best friend that has struggled with infertility welcomed a baby boy, and I was blessed enough to become a SAHM.

But daaaaaaannnnnnnggggggg, there has been so much stress, fear, anxiety, and extreme loss (both in the celebrity world and personal) with this year. I had so much planned to blog this week, but I just can’t right now.

I’m really just counting down the days until we can leave 2016 behind and look forward to a better, brighter 2017!

The other day I was reading about the health benefits of pomegranate seeds. It was then that I realized I had never tried pomegranate before! True, I’ve had pomegranate-flavored stuff (mostly candy-ha!) but never true pomegranate seeds. I decided to rectify this and went to the grocery store and bought one!

I won’t lie, I was a little nervous. But, the health benefits kept playing over in my head and I decided to just dive in! I wasn’t sure what to expect so when I sliced it open, Huff the Hubs laughed at my gasp:

After watching a YouTube video (yes, I had to do that) I learned an easy way to separate the seeds from the rind– just add water! It worked great!

Y’all, these were SO good! This is definitely my new, go-to healthy snack!

Mommy Monday

I’ve been so behind on my blogging game lately. But, in my defense, I have a good excuse. 

Huff the Babe–who just turned 9 months–has yet to sleep through the night. Well, I take that back. When he was 4 months old he slept six hours in a row without waking. But that’s it. Homeboy has been waking AT LEAST 3 times EVERY. SINGLE. NIGHT.

I thought I was handling the sleep deprivation pretty well until the last month or so. Couple sleep deprivation with the hustle and bustle of the holiday season and it’s been a disaster. I’ve been moody, irritable, unable to focus, and short with the kids.

I decided something HAD to give. So, after reading a book a friend loaned me and reading some online, Huff the Hubs and I started sleep training the wee one this weekend.

He’s done pretty well so far, so I’m hoping he just keeps on improving. I’m in desperate need of good, consistent, consecutive hours of sleep. Fingers crossed this sleep training biz works!

Happy Tuesday, errybody! This weekend was my birthday and I planned on doing two things: napping and partaking in an ungodly amount of cheesecake. Cheesecake is to me what cookies are to Cookie Monster. Seriously.

A week ago, my sister sent me this video on Facebook of Fruity Pebbles Cheesecake and I immediately asked her to make it for my birthday lunch at my parents! (Fruity Pebbles is my FAVORITE cereal!) Thankfully, she obliged and its today’s Try It Tuesday!

Here’s what you need:

`4 cups Fruity Pebbles cereal, plus more for garnish

~1/3 cup melted butter

~1/4 teaspoon salt

~No Bake Cheesecake Mix by Jell-O (the original recipe calls for other ingredients, but we have folks in the family whose tummies can’t handle heavy whipping cream)

 

Process cereal in a food processor until it’s very fine. (Not like, “Dang, Benedict Cumberbatch is fine!” but like, “really small”.) Then, measure 2 1/2 cups of the cereal into a large bowl and set the rest to the side. Add the melted butter and salt to the cereal and mix well. Pour your crust into a pie pan and shape it to the pan, making sure to bring the mixture up the sides of the pan. Cover and freeze for about 15 minutes, or until firm.

Mix the no bake cheesecake according to the directions on the box, adding in the extra cereal. Pour into the pie crust and smooth. Place it back in the fridge for at least an hour.

When ready to serve, top with more cereal as a garnish. Then, dig in!

I REALLY liked this! I mean, its cheesecake and Fruity Pebbles—what’s not to like?! Not everyone shared my enthusiasm. Let’s just say I took almost an entire cheesecake home with me. (And I was not complaining!)

Hey y’all! With the hustle and bustle of the holiday season, I’ve been relying on my handy dandy Crock Pot more than ever! And, thanks to Pinterest, I’ve been able to find A LOT of awesome recipes, let this one for honey garlic chicken!

Here’s what you need:

4 to 6 boneless, skinless chicken thighs (I used chicken breasts)

4 garlic cloves, minced

⅓ cup honey

½ cup low sodium ketchup

½ cup low sodium soy sauce

½ teaspoon dried oregano

2 tablespoons fresh parsley (I didn’t have fresh, so I used dried)

 

Place chicken in slow cooker. In a medium-sized bowl, whisk garlic, honey, ketchup, soy sauce, oregano, and parsley until thoroughly mixed.

Pour the sauce over the chicken.

Cover and cook on low for 4 to 5 hours or on high for 3.5 to 4 hours.

 

When the time is right, serve with your favorite sides!

I liked this recipe okay. I mean, it wasn’t the greatest meal ever, but it most certainly wasn’t the worst. What I really liked about it was that it was low in calories. And, paired with our organic brown rice, qunioa, and steamed veggies, it made a pretty healthy meal!
