The other day, I was picking up a few things at Walmart and I passed the gluten free section. I like to stop and look because my mother-in-law and a good friend of mine both have Celiac and whenever I see new, GF products I like to mention it to them.

 

One item in particular caught my eye. It touted that it was not only gluten free but vegan, non gmo, and grain free! Plus, it also had spinach hidden in it! Intrigued, I grabbed a pouch and tossed it into my basket.

I was super excited to try these and test them out on my kiddos. I followed the instructions and baked those puppies ASAP.

When they first came out of the oven and cooled for a few minutes, I tried one.

I wasn’t too impressed.

Huff the Hubs and Huff the Tot, however, LOVED them!

It wasn’t until the next day when I tried a brownie without heating it up that I saw what they were talking about.

 

HOLY MACKEREL, THESE THINGS ARE DELICIOUS!

I think they just need time to cool, settle, and let all the ingredients “mush” together for a bit. I will absolutely be buying these again!

 

A few things I’ll do differently next time:

~Pour them into a bigger pan than an 8×8. The package said to bake them for 20-22 minutes. In my 8×8 pan (like it recommends on the package) it took 45 minutes and the middle of the brownies were still gooey.

~Add in 1 tablespoon Enjoy Life chocolate chips. The reason I say this brand is because they are still allergy-friendly!

~Make them without the intention of eating right away. These brownies were sooooo much better the next day. Next time I bake them, I’ll keep that in mind.

 

This company also makes other mixes too, such as carrot cake, chocolate cake, chocolate chip cookies, and a bare muffin mix (meaning you can add ANYTHING to them to make any kind of muffin you want!).

After Valentine’s Day–or, as I like to call it, “Day Losing Count of all the Carbs”–I told myself to get my rear in gear and STAHP with the sweets and carbohydrates because they’re not helping me with my goal. Which is so incredibly difficult when the day after Valentine’s Day is Half-Price Candy Day.

Sigh. 

I figured I should have something on hand for when I want a carb (e.g., bread) but I don’t want to completely render all my hard work moot. Enter: cloud bread!

I’ve seen this innumerable times on Pinterest and have wanted to try it forever! The best part is: its only three ingredients!

Here’s what you need:

4 eggs, separated

1/2 tsp cream of tartar

1/4 cup  cream cheese, softened

 

First, preheat your oven to 300°. Then, line two cookie sheets with parchment paper and set aside. Next, beat the egg whites and cream of tartar in a bowl with an electric mixer on high until stiff peaks form. This will take about 1 to 2 minutes.

 

After that, beat the cream cheese in a separate bowl on medium speed until smooth. Add in the egg yolks (one by one) beating the mixtures until its completely smooth. This part is tricky: gently fold in the egg white mixture into your yolk mixture. Be sure to not “mix”.

 

When the mixture appears to be one color, use a 1/4-cup measuring cup and scoop batter onto your prepared cookie sheets about two inches apart. Then, spread each scoop into a small (about 4-inch) circle.

Pop into the oven and bake for 25 minutes or until golden brown and the centers are completely set. When they’re done, cool your bread on the baking pans for about 5 minutes and then remove and place onto wire racks to completely cool.

Y’all, I REALLY liked this! I made a sandwich out of it for lunch (complete with yummy Quest protein chips!) and it was soooo good!

The bread was light and fluffy but not “eggy”. It was great! And just check out the nutrition information for one piece:

After the fiasco of last week’s cheesecake in a mug, I was on the hunt for an easy, tasty Keto dessert. Thankfully, Pinterest delivered!
Here’s what I used:

~One packet sugar free Jell-O cheesecake mix
~2 cups heavy whipping cream
All you have to do is mix the two together until it starts to thicken up. Then, either eat right away or divvy them up into individual containers and refrigerate!

You guys, this was DELICIOUS! Seriously, it was so good! The calorie count was a little high BUT, it is Keto and it’s not bad for a dessert or a “treat”! Here are the stats:

While doing the Keto diet, I honestly haven’t missed bread *too* much. But there are days when you just want a little carby-somethin’ to satisfy a craving. I’ve made Keto rolls before and I REALLY like them, but I didn’t have the time to make them the other morning. Thankfully, after consulting Pinterest, I found this:

I gathered my ingredients and set to work!

~3 tbsp almond flour

~1 1/2 tbsp melted butter

~1/2 tsp baking powder

~1 egg white

 

Mix up all the ingredients in a microwave-safe mug:

Then pop it in the microwave for 90 seconds:

I waited a few minutes before popping it out of the mug and then I cut it in half–it actually looked like a real English muffin!

I thought it was pretty good, but it was super dry. I smashed up a raspberry and spread it on top like a jam and that helped a lot!

Was this absolutely delicious? Not really. Would it work if I was deep in the throes of a bread craving? Eh, maybe. Personally, I think I’ll stick to baking the Keto rolls!

There are a ton of apps that you can use to track your nutrition, such as: Sparkpeople (that’s what I use), My Fitness Pal, and My Diet Coach. Water tracking apps like Plant Nanny make drinking water actually fun! This app gives you a virtual plant that you care for through how many cups of water you drink in a day. Its basically a Tamogachi with added health benefits! You can even find some great printables to help you stay on track here and here!

 

 

Taking Care of YOU

If you’re wanting to make self-care a priority in the new year, Aloe Bud is great for that! It sends reminders throughout the day to get up and move, reach out to a friend, and helps you celebrate small victories. Another app called #SelfCare lets you pretend you’re able to stay in bed all day! Throwing mindless scrolling to the wayside, this app helps you take breaks throughout the day and just relax!

 

 

Mental Health

As someone who has struggled with anxiety, depression, and OCD most of my life, anytime I find new, healthy ways to cope I’m totally onboard with. Apps such as HelloMind, Calm, and Headspace can help you make great strides if you struggle with anxiety or panic disorders and help you achieve some peace! Plus, never underestimate the power of simply writing out your thoughts/fears/worries/blessings in a journal.

Now that the holidays are over, I’ve really been trying to up my protein intake and lower my carbs. But sometimes you just want something that seems like a treat, even if its packed with good stuff. I’ve seen these bars before and have always wanted to try them, so I decided to snag one!

Y’all, this was soooooo good! Its definitely no Oreo: The Most Stuf, but if you’re watching carbs its a great way to stay on track but also give your sweet tooth a little somethin’-somethin’!
