Happy Tuesday, Tryers! This weekend was Easter and let me tell ya, so many tasty treats were demolished. I’m talking mountains of Reese’s Eggs and handfuls of Peeps. Along with the candy, I made a sweet–and super easy–dessert that is sure to please any crowd! (Shout out to theblondcook.com and Pinterest for helpin’ a sistah out!) I made these delicious morsels:

Here’s what you need:

¼ cup packed light brown sugar

1 teaspoon apple pie spice, and additional apple pie spice (about ¼ teaspoon) for sprinkling on top of crescent rolls

3 tablespoons butter, melted

⅓ cup chopped pecans (I didn’t use these because we have folks with nut allergies)

2 small Granny Smith apple, cored and sliced into 8 (1/2-inch) slices

2 (8-ounce) can Pillsbury Original crescent rolls (I thought I had bought original crescent rolls. Turns out I bought crescent rounds. Ugh. But I was able to make them work!)

 

First, preheat your oven to 375 and line a baking sheet with parchment paper. Then, melt your butter and toss the apple slices around in it.

After that, lay out the crescent rolls on the parchment paper-lined baking sheet. Sprinkle the brown sugar and spice mixture evenly onto each roll. Then, if you’re using nuts, add those to each roll as well. Next, place apple slices on each roll, starting at the widest end, and roll up.

Brush the crescent rolls with the remaining butter, sprinkle with sugar and spices, and pop them in the oven for 10-12 minutes.

When they’re done, let them cool and dig in!

These were soooooo good, y’all! They would’ve been even better with a small scoop of vanilla ice cream on them! I think I’ll be making these A LOT from now on!

Try It Tuesday

Hey y’all! I have been sooooooooooooooo behind on my Try Its! Things have just been CA-RA-ZEE around the Huffman Homestead. But, I am back with a fun Try It that anyone can do!

 

I was scrolling through Pinterest the other night (trying to fall asleep, but unable to because of the horrible “morning sickness” that hits me right after dinner) and saw this:

Immediately I wanted to try it!

And I did.

And failed.

The picture and instructions were a little hard to follow. So I did what anyone would do, I consulted YouTube. Then, I found this instructional video:

 

So I tried it out!

Yeah, I couldn’t do it. After about four tries, I got mad and just ate it. In my defense though, I just finished my strength training workout so I was a little shaky. But still, I’m super bummed I couldn’t do it!

Fall Bucket List

The weather is cooling down, football season has started, and my Pinterest news feed is jam-packed with pumpkin-flavored goodies. That can mean only one thing: fall is here. Now that autumn is upon us, I’ve been thinking about all the things I want to do now that the days are getting shorter and fashion calls for hoodies instead of flip flops.

I give you: my fall bucket list.

#5: FINALLY make this apple cider that I pinned almost two years ago and have yet to try:

I’ve had this pinned for a looong time and I have yet to try it. I love apple cider, but I typically just buy the packets. And even though they smell great, the granules don’t always mix well and you’re left with cider that has the consistency of sand. So this is a must try this fall!

 

#4: Watch an entire OU game

When I worked at a local radio station, I produced the OU football games. So every Saturday that there was a home game, I was manning the booth while Bob Barry Sr. did the pay-by-play. I’d also watch each and every game. So far this season, only like one game has been broadcast on a channel that Huff the Hubs and I actually have. I watched a little bit of that game, but not the whole thing. I’m determined to actually watch one from start to finish this season! Its hard to call yourself a fan if you don’t watch the games!

 

#3: Make a nerdy costume for Hermione’s first Halloween.

Pinterest has made my excitement for Hermione’s first Halloween sky rocket. Everyday I see more and more awesomely geektastic costumes for my little nerdling. I’ve already got an idea for what I want her to be, but there are just so many cute ideas! I need to start working on it. I’m starting to learn that having a baby equals not a lot of time to do other things. 

 

#2: Take Hermione to a pumpkin patch.

There’s a nearby farm called the Orr Family Farm. It is ADORABLE. I’ve been wanting to go for a long time, but I’ve just never had the chance. In May of this year, the F5 tornado that ravaged Moore also tore up most of the Orr Family Farm. I was so sad; I didn’t think they’d ever be back in business by the fall and their annual Pumpkin Patch. But thankfully, they’ve reopened just in time for Halloween! I cannot wait to take Hermione and get some pumpkins for my little pumpkin!

 

#1: Run more.

I hate running in the summer. Its hot, its humid, and if you don’t go at the butt crack of dawn, you’ll die from heat exhaustion. My favorite time of year to run is the fall. You can basically lace up your shoes and go at any time of day and its PERFECT. And seeing as how I still have 10lbs left to lose before I’m at pre-baby weight AND I’m going to need to start training for the full marathon in April. I’m ready to hit the pavement!

Sorry I was a little lame yesterday and didn’t post anything. I’ve made up for it today though! If you follow me on Pinterest, you know my Try It Tuesday board is FULL of yummy recipes (most of which, I have yet to try). So, I thought I’d try one today!

The one that sounded most tasty (and that I already had all the ingredients for) was this gem:

So, I gathered my schtuff:

I was excited because the recipe called for 1 cup shredded apple (aka, 1 medium apple). I thought: Hey! I’ll use my new slicer/shredder I got for Christmas! Yeah…I really should’ve waited until Huff the Hubs came home so I would’ve had adult supervision.

Needless to say, I just chopped up the apples and diced them as small as I could. (I would’ve used a cheese grater but we don’t have one. And yet we have two sets of Star Trek glasses. Go figure.)

I mixed up all the ingredients and the contents of my bowl looked like this:

I greased a pan (which I later learned was way too big. The recipe called for a 9×9 pan. I had to use an 8×8) and popped it into the pre-heated oven at 350. And bee tee dub, it was smelling AWESOME.

Twenty minutes later, I had this:

I cheated and didn’t wait til it was cooled to try it. It was pretty good! I couldn’t really taste the apple though. I think next time I might use bananas instead and add some dark chocolate chips!
