After the fiasco of last week’s cheesecake in a mug, I was on the hunt for an easy, tasty Keto dessert. Thankfully, Pinterest delivered!
Here’s what I used:
IMG_4018
~One packet sugar free Jell-O cheesecake mix
~2 cups heavy whipping cream
All you have to do is mix the two together until it starts to thicken up. Then, either eat right away or divvy them up into individual containers and refrigerate!

You guys, this was DELICIOUS! Seriously, it was so good! The calorie count was a little high BUT, it is Keto and it’s not bad for a dessert or a “treat”! Here are the stats:

As some of y’all know, I’m trying to up my protein intake so I can build more muscle. Not that I’m trying to be the female version of Arnold Schwarzenegger or anything, I just want my protein intake to be substantially more than my carbohydrate intake. (Because lower carb + more protein = more fat loss.)

Anywhoo, its been kind of a struggle to find protein-friendly snacks and treats that aren’t beef jerky or meatballs. The other day I was craving a chocolate shake and I just didn’t have the energy to make a Keto-friendly one, so I went to Walmart to see what I could find. Enter this:

I was a little nervous at first because I was afraid it would taste like a Slim Fast shake (of which I’m not a fan) but I was pleasantly surprised! This shake was sooooo good! The entire bottle was only 160 calories, 4 grams of fat, and 20 grams of protein! I haven’t tried any other flavors, but I seriously think I will because this one was so tasty!

I’ve been doing the low-carb/Keto thing for a few weeks now and seeing good results so I’m keeping this train going! I found an AMAZINGLY delicious dessert that is LC/K and I just gotta share it!

Here’s what you need:

IMG_7448

~4 oz.  cream cheese, softened (seriously, it needs to be super soft, but not melted)

~8 oz. Milk Chocolate Delight Atkins Shake (I used a Svelte Organic shake because that’s what I had on hand)

~1 box sugar-free chocolate pudding mix

~4 tbs. peanut butter

First, mix the cream cheese and shake in a large mixing bowl until it is well mixed and there are no chunks.

Then, add the packet of sugar-free pudding and peanut butter.  Blend well!

Line a plate with wax paper (I didn’t have any so I used foil; worked just as well!). Roll the mixture into little balls and put them on the foil or wax paper and place them in the freezer to set. (Note: My mixture wasn’t as “doughy” as the original recipes’, so I did spoonfuls of the mixture. They ended up looking like little piles of dog poo…Whoops!)

After about an hour or so, pop the balls into a container and store in the freezer! You can enjoy these frozen or let them thaw for about a minute or two! They are sooooooo good!

Each ball has about 35 calories, 2 carbs, and 1 gram of protein! Have you ever tried these before? What did you think? Share in the comments below!

Last week, I decided to go “low carb” for the week. My weight loss had been plateau-ing for a while and I was getting frustrated. Plus, I’ve been doing this get fit summer challenge from Buzzfeed and was starting to see the scale creep up (because lifting weights is a hunger-inducing business, y’all).

Anyway, I needed to find some way to still have some treats while I was abstaining from carbs. And praise The Lord, I found this!

They’re low-carb peanut butter cookies! Here’s what you need:

IMG_2525

~1 cup peanut butter (I used Jif Omega-3)

~1 cup Splenda (you could use Stevia if you like but it’s a little bitter for my taste)

~1 egg

That’s it! That’s all you need!

Preheat your oven to 350*. Then, toss everything into a bowl and combine.

Scoop out about a tablespoon onto a parchment paper-lined cookie sheet. I used a cookie scoop and it worked wonders! Then, dip a fork in Splenda and press down the dough rolls.

Pop them in the oven for 12 minutes, and then let them cool.

Then, devour!

OMG, y’all, these cookies were DELICIOUS! They really helped me get through those cravings when I really wanted something sweet. And, to be honest, the low-carb thing wasn’t that bad. I mean, there was one day I really wanted some waffle fries from Chick-Fil-A, but for the most part, it went well. I think part of that was because I had a cold and it sort of took my appetite away. But it helped! I lost 3lbs and an inch off my waist! Yay!
