The other day, I was picking up a few things at Walmart and I passed the gluten free section. I like to stop and look because my mother-in-law and a good friend of mine both have Celiac and whenever I see new, GF products I like to mention it to them.

 

One item in particular caught my eye. It touted that it was not only gluten free but vegan, non gmo, and grain free! Plus, it also had spinach hidden in it! Intrigued, I grabbed a pouch and tossed it into my basket.

I was super excited to try these and test them out on my kiddos. I followed the instructions and baked those puppies ASAP.

When they first came out of the oven and cooled for a few minutes, I tried one.

I wasn’t too impressed.

Huff the Hubs and Huff the Tot, however, LOVED them!

It wasn’t until the next day when I tried a brownie without heating it up that I saw what they were talking about.

 

HOLY MACKEREL, THESE THINGS ARE DELICIOUS!

I think they just need time to cool, settle, and let all the ingredients “mush” together for a bit. I will absolutely be buying these again!

 

A few things I’ll do differently next time:

~Pour them into a bigger pan than an 8×8. The package said to bake them for 20-22 minutes. In my 8×8 pan (like it recommends on the package) it took 45 minutes and the middle of the brownies were still gooey.

~Add in 1 tablespoon Enjoy Life chocolate chips. The reason I say this brand is because they are still allergy-friendly!

~Make them without the intention of eating right away. These brownies were sooooo much better the next day. Next time I bake them, I’ll keep that in mind.

 

This company also makes other mixes too, such as carrot cake, chocolate cake, chocolate chip cookies, and a bare muffin mix (meaning you can add ANYTHING to them to make any kind of muffin you want!).

Now that the holidays are over, I’ve really been trying to up my protein intake and lower my carbs. But sometimes you just want something that seems like a treat, even if its packed with good stuff. I’ve seen these bars before and have always wanted to try them, so I decided to snag one!

Y’all, this was soooooo good! Its definitely no Oreo: The Most Stuf, but if you’re watching carbs its a great way to stay on track but also give your sweet tooth a little somethin’-somethin’!

A few weeks ago, I had a horrible ache in my shoulder. I chalked it up to stress of the holiday season and did everything I could work the tension out of my shoulder. Nothing really helped. Cut to me at Walmart, looking for an Epsom salt soak in the bath soap aisle and I stumbled across this:

Intrigued, I decided to buy it and see if it could help my aching muscles.

That night when I took a shower, I remember this and squirted a little into my palm and instantly I felt the heat! I started massaging it into my shoulder and it felt SOOO good!

The heat didn’t last very long, so I used it two more times and by the time I got out of the shower, my shoulder felt the best it had in DAYS! I think this would be great for anyone with arthritis or even just for an at-home pedicure!

Last week, I told y’all that I bought some new cauliflower-based products. This weekend, I decided to try out another one: Green Giant’s cauliflower pizza crust!

I wanted to see if I could make a pizza with simple ingredients and make it low-carb-friendly as well as have it actually taste good. Here’s what I used:

~Green Giant Cauliflower Pizza Crust

~1 tbsp extra virgin olive oil

~1 tsp Italian seasoning

~1/2 tsp minced garlic

~1/4 tsp Kosher salt

~1 cup fresh spinach, chopped

~3/4 cup fat free mozzarella cheese

~4 ounces grilled chicken

 

I mixed the spices and oil first and then spread it onto the pizza crust. I popped that in the oven for a few minutes and then took the crust back out, per the instructions on the box. Then, I added the spinach, cheese, and chicken on the crust and put the pizza back in the oven for about 10 minutes. After that, the pizza was ready!

I think it turned out pretty good! The part of the crust that didn’t have any toppings on it was very “cauliflower-y”-tasting, but other than that, I liked this! I will definitely be trying this again!

Last week, a friend of mine posted a picture of some new products she found at the grocery store. They were a part of the new riced cauliflower line from Green Giant! Intrigued, I bought one of the products to try–the riced cauliflower stuffing!

This healthy version of the Thanksgiving staple is packed with cauliflower, carrots, celery, cranberries, and tasty herbs and spices! Its super easy to cook (and by “cook” I mean pop the bag in the microwave for like, 5 minutes) and its done!

We had ours on the side of Keto chicken and asparagus! It was actually pretty good! I mean, I don’t think it will completely take the place of stuffing, but it was nice to have a healthier alternative!

I’ve been trying to slim down before our big trip to Disney World this November and I gotta tell ya, its been ROUGH. I’m not one of those people that “forgets to eat” or when they’re stressed, stops eating. I’m the complete opposite. My day is basically distracting myself until its time to eat again and/or shotgunning hidden chocolate because my kids are driving me batty.

Because of this, I’ve been looking for healthy/healthier treats to help me feel like I’m indulging without completely derailing my day.  When I was grocery shopping the other day I came across these:

These cups are filled with apples, oatmeal, and chia seeds! There are also other flavors including pear and maple and peach cinnamon spice. The box says you can enjoy them hot or cold, but I decided it would be nice to have a warm dessert! I popped it in the microwave for 45 seconds and voila!

The first bite I took wasn’t that great. In fact, I *almost* threw it away. But then I stirred it up and plopped a tablespoon of fat free whipped cream on top and it was AMAZING! Now, I will say that this isn’t the *healthiest* of treats–there’s quite a bit of sugar in it and there’s not a ton of protein. BUT, if you’d like to have this rather than a hot fudge sundae, its definitely the healthier of the two!

Finding yummy desserts that not only satisfy your sweet tooth but also help you stay on track are pretty hard to find. The other day I was on a mission to find something that would take the chocolate cravings away and not tip my calorie count over the edge. Dole Dippers came to the rescue!

Dole has a line of chocolate-covered fruit available in the freezer section! Yes, I know I could probably make these at home for a lot less than what I paid but who has that kind of time?! Certainly not this woman! Anywho, I grabbed a box of the dark chocolate covered banana slices and they were AMAZING!

Each box comes with 6 packs of 4 banana slices covered in dark chocolate. This is exactly what I was looking for! Its delicious, its only 100 calories per pack, and hello–its CHOCOLATE.
